A short pasta that comes from Sicily, its shape reminds an ancient parchmentpaper and its name quotes the "handmade" origin (casareccia in Italian). It is a "modern" interpretation of the "pasta busiata" of arabian origin, that was produced using a "bus", a stick used to roll small pieces of pasta. Its surface smooth but porous, is ideal for many types of relish including meat ragù and vegetables sauces.
