Spaghetti alla carbonara

  • 320 gr Spaghetti
  • 160 gr Bacon
  • 4 eggs
  • 100 gr grated Pecorino cheese
  • Salt and black pepper to taste


Bring a large pot of water to a boil. In the meanwhile, cut the bacon in strips and cook in a heavy skillet until browned and crisp. Remove bacon from the pan and set aside. When the water is boiling, add the salt and drop the pasta without breaking it. In a bowl, combine the eggs, half of the Pecorino cheese and pepper and beat until well blended. When the pasta is done, drain and immediately add to the bowl with the bacon until creamy. Add the remaining cheese and pepper and serve immediately.
